Chef's Restaurant Just off the metro station, this new unit, after the one on rue des Fossés Saint-Marcel, is off to a great start. Émile Cotte has seen the big picture in this new setting, but the clientele is there, and rightly so. Here, he serves bourgeois cuisine that has been updated to reflect the latest tastes, with the generous gourmet flavors he's so well known for. His Carte Blanche menus (for him, of course, not for the customer) give him complete freedom to showcase the terrine of his childhood, duck, pork, foie gras, chestnuts (a canaille moment), the cassolette of snails from Limousin (his native land), langoustine ravioli on a silky, creamy bisque, sautéed veal sweetbreads, cumin-flavored potimarron, tarragon jus. This is sure to please a hearty appetite, and the dessert is a light lychee, raspberry and tarragon pavlova. Friendly, smiling service and a well-stocked cellar with a choice of wines from all regions and at all prices.
